Originally from Calais, Clément Hamy grew up near the fishing ports where his father worked. By taking part in the family business, he quickly developed a passion for the exceptional products of his homeland, leading him to choose the profession of a cook.
With rigorous training and multiple experiences in Michelin-starred restaurants and Relais & Châteaux hotels, the new chef refined his craft and decided to cross the Atlantic in search of new challenges.
In 2024, Clément Hamy joined the StoneHaven team as Executive Chef, with the mission of introducing you to the region’s treasures while defining what “Laurentian cuisine” truly is.

The establishment celebrates ingredients sourced through responsible fishing practices, such as striped bass from Québec and New Brunswick, and prioritizes short supply chains to minimize its carbon footprint.
